Brussels sprout That time of Year ;)
Forerunners to modern Brussels sprouts were likely cultivated in Ancient Rome.
Brussels sprouts as they are now known were grown possibly as early as the 13th century in what is now Belgium.
The first written reference dates to 1587.

The edible sprouts grow like buds in helical patterns along the side of long, thick stalks

Sprouts are considered to be sweetest after a frost.
Consuming Brussels sprouts in excess may not be suitable for patients taking anticoagulants since they contain vitamin K, a blood-clotting factor.

In one such reported incident, eating too many Brussels sprouts may have countered blood-thinning therapy

~Brussel Sprouts with Bacon and Cranberries~
~Side Dish~

1 Tbsp oil, 1 Tbsp unsalted butter
1 cup of Brussel Sprouts, cleaned and cut in half
1/2 pound of bacon, diced into bite size pieces
1 clove of garlic, minced
2 shallots, diced
1/4 cup moist dried cranberries

Cook bacon in pan until crisp.  Remove to paper towel with a slotted spoon.  Add the oil and butter to pan and sautee garlic and onions for a minute.  Add cranberries and Brussel sprouts and cook until Brussel sprouts are golden brown and cooked through.  Add bacon back to pan, give all ingredients a stir to mix.

Confucius once said, “Learn things often, and practice what you have learned—is that not an enjoyable thing?”

So what is the deeper meaning of the Chinese character for study, 學 (xué)?

The bottom half of 學 is the character for child, 子(zǐ). On top of 子 is the radical 冖(mì), which signifies that a child’s intelligence just beginning to develop. The left and right-hand sides of the character resemble left and right hands. In the middle of the two hands is the symbol 爻 (yáo), from the prehistoric divination text, the Book of Changes (I-Ching). Hence the character 學 depicts a child using his left and right hands to probe into the mysteries of the universe.

In ancient times, people believed that studying can help one understand cosmic phenomena, as well as one’s fate. Hence, they believed that study is in fact wisdom imparted from the heavens. Indeed, in history we can see many great prophets who predicted the fate of today’s society by studying ancient knowledge.

Blackberries abundantly in Season (U.K.) The berries themselves are feminine in nature and ruled by the element of earth.
They represent an abundant harvest and can be used in spells and magical cooking for prosperity.

Blackberries were considered protective against earthbound spirits and vampires.
If planted near a home, a vampire couldn't enter because he would obsessively count the berries and forget what he was about.

When mature, the berries are eaten and their seeds dispersed by several mammals, such as the red fox and the Eurasian badger, as well as by small birds.

Blackberry fruit are red before they are ripe, leading to an old expression that "blackberries are red when they're green".

Not to be eaten after Samhain because the Púca spits on them and they become inedible (in some parts of Ireland they believe that the Púca urinates on them).
The Púca is an Irish spirit (one of the fairy folk).

An arch of bramble which had rooted at both ends was believed to have special powers and if you wished to invoke evil spirits you could do so by crawling through the arch at Samhain while making your wish.

Could also be used to cure, for example, a child with whooping cough could be cured by passing it under the arch three times before breakfast for nine consecutive days while saying “in bramble, out cough, here I leave the whooping cough.

In Ireland if you found a piece of bramble attached to a cows tail at Beltainne it was considered suspicious as it meant someone was trying to put a spell on the milk.

Medical uses include using the leaves in a cure for diarrhoea in both cattle and people; it could cure dropsy and was considered to have fantastic curative powers for coughs and colds.

It was also used for a variety of skin complaints such as scalds, burns,
boils, shingles and spots.

Sherry Trifle Trifles make perfection, and perfection is no trifle: Michelangelo
The earliest use of the name trifle was in a recipe for a thick cream flavored with sugar, ginger, and rosewater, in Thomas Dawson's 1585 book of English cookery The Good Huswifes Jewell.

Trifle evolved from a similar dessert known as a fool and originally the two names were used interchangeably.
Jelly is first recorded as part of the recipe in later editions of Hannah Glasse's eighteenth-century book The Art of Cookery

In her recipe she instructed using hartshorn or bones of calves feet as the base ingredient (to supply gelatin) for the jelly.

The fruit and sponge layers are suspended in fruit-flavoured jelly, and these ingredients are usually arranged to produce three or four layers.

The contents of a trifle are highly variable; many varieties exist, some foregoing fruit entirely and instead using other ingredients such as chocolate, coffee or vanilla.

Mrs Beeton’s Trifle Recipe taken from Mrs Beeton’s Book of Household Management, first published in 1861.

For the whip:
1 pint of cream
3oz sugar
2 egg whites
small glass sherry

For the trifle:
1 pint custard
6 small sponge cakes
12 macaroons
2 dozen ratafias
2oz sweet almonds
lemon rind
layer of jam
1/2 pint sherry
6 tbsp brandy

(Sufficient for 1 trifle)

1. The whip to lay over the top of the trifle should be made the day before it is required for the table, as the flavour is better and it is much more solid than when prepared the same day.
Put into a large bowl the pounded sugar, the whites of the eggs, which should be beaten to a stiff froth, a glass of sherry or sweet wine, and the cream.

2. Whisk these ingredients well in a cool place, and take off the froth with a skimmer as fast as it rises, and put it on a sieve to drain; continue the whisking till there is sufficient of the whip, which must be put away in a cool place to drain.

3. The next day, place the sponge cakes, macaroons and ratafias at the bottom of a trifle dish; pour over them 1/2 pint of sherry or sweet wine, mixed with 6 tablespoons of brandy, and should this proportion of wine not be found quite sufficient, add a little more, as the cakes should be well soaked.
Over the cakes put the grated lemon rind, the sweet almonds, blanched and cut into strips, and a layer of raspberry or strawberry jam.

4. Make a good custard using 8 eggs to the pint of milk, and let this cool a little; then pour it over the cakes etc.
The whip being made the day previously, and the trifle prepared, there remains nothing to do now but heap the whip lightly over the top: this should stand as high as possible, and it may be garnished with strips of bright currant jelly, crystallised sweetmeats, or flowers; the small coloured comfits are sometimes used for the purpose of garnishing a trifle, but they are now considered rather old-fashioned.

Average cost, with cream at 1s. per pint, 5s. 6d. Seasonable at any time. ;)

Dionysus started out with good intentions
as the god of vegetation.
However, things changed when he went from growing the
vine to drinking its fermented juices
party time !

The land, like Dionysus, has changed.

Here he stands, straddled between the
ancient landscapes and the irrigated
lands of intensive agriculture.
It's possible to go too far
It's possible to regain the balance.
People can change things for the better.

The Maenads (translates as "raving ones") female followers of Dionysus inspired into a state of ecstatic frenzy through a combination of dancing and intoxication.
They went into the mountains at night and practiced strange rites.

German philologist Walter Friedrich Otto writes:
The god-intoxicated celebrants draw milk and honey from the streams.
They strike rocks with the thyrsus, and water gushes forth.

They lower the thyrsus to the earth, and a spring of wine bubbles up.
If they want milk, they scratch up the ground with their fingers and draw up the milky fluid.
Honey trickles down from the thyrsus made of the wood of the ivy, they gird themselves with snakes and give suck to fawns and wolf cubs as if they were infants at the breast.

Fire does not burn them.
No weapon of iron can wound them, and the snakes harmlessly lick up the sweat from their heated cheeks.

Fierce bulls fall to the ground, victims to numberless, tearing female hands, and sturdy trees are torn up by the roots with their combined efforts.

Maenads' are found the later references as priestesses of the Dionystic cult.
In the third century BC, when an Asia Minor city wanted to create a maenadic cult of Dionysus, the Delphic Oracle bid them to send to Thebes for both instruction and three professional maenads, stating, "Go to the holy plain of Thebes so that you may get maenads who are from the family of Ino, daughter of Cadmus.
They will give to you both the rites and good practices, and they will establish dance groups (thiasoi) of Bacchus [ie: Dionysus] in your city."

The vegetable dye Annatto is mixed with the curds while placing it into the moulds that gives attractive red-orange marble like texture to the cheese.

A burning glass is a large convex lens that can concentrate the sun's rays onto a small area, heating up the area and thus resulting in ignition of the exposed surface.

They were used in 18th-century chemical studies for burning materials in closed glass vessels where the products of combustion could be trapped for analysis. The burning glass was a useful contrivance in the days before electrical ignition was easily achieved

Two Birds(Chicken) with One Stone
My second dilemma concerns a second set of two chickens, however these chickens are alive and even more troublesome. These two chickens, apparently vagabonds of some kind, wandered onto the grounds of the monastery earlier today.

They were drunk and rowdy, and disturbed many of the other monks during post-breakfast meditation.

I asked them kindly to leave us in peace and find refuge elsewhere, but they refused and became belligerent.
They both swung their wings at me as if to punch me, but fortunately they were quite drunk and immediately fell, unconscious, to the ground.

As they were comatose, I quickly grabbed them by their talons, placed them outside the monastery walls, and locked the gate.

However, they both regained consciousness mere minutes later, and since then, have been trying in vain to fly over the gate.

To make matters worse, they seem even more belligerent, and their drunken vulgarity continues to disturb our meditations.

“So I ask you, wise Master, what is the correct path of action?”

To which Lao Tzen Tzang replied:

“By killing two birds with one stone, you shall kill two birds with one stone.”

“And how shall I do that?” asked the pupil.

You must find the biggest stone in the garden. Also a twelve foot ladder.
Take these to the front gate, and carry the stone to the top of the ladder.
When the chickens are not looking, drop the stone on top of them.

Then cook them for supper.

“But, Master, what if the stone is too heavy to carry up the ladder?”

“Then you must find a slightly smaller stone that is not as heavy.”

“But, master, what if none of the stones are big enough to kill both chickens in one fell swoop?”

“Then find a stone you can fit in your hand.
Aim for one chicken and throw the stone in a sidearm motion, as you might throw a curveball.
The stone should ricochet off of the first chicken and hit the second chicken as well.”

The pupil followed his master’s advice but, alas, once again proved himself grossly incompetent.

He carried a large stone to the top of a ladder placed next to the front gate, but just as he was about to drop it, one of the chickens flew up and pecked him in the eye.

The young monk lost his balance and fell, dropping the rock on his own face.

Though as dumb luck would have it, the chickens saw this and laughed until they choked to death on their own vomit.

The young monk may have lost several teeth, but that didn’t prevent him from cooking and eating a delectable sesame chicken supper.

And for the first and second times in history, two birds were killed with one stone. Also a ladder.

In the West, we say "to kill two birds with one stone," but in ancient China, archery was the way to go.
Meet Zhang Sunsheng: a well-trusted strategist and a talented archer from China’s Northern and Southern dynasties (420-589 C.E). Zhang was charged with escorting a princess to the northwest, where she would be married off to the neighboring Turkish clan. While in the Turkish kingdom, the king became so impressed by Zhang’s archery skills that he invited Zhang stay as a special guest of honor. Thus, Zhang spent the next year on holiday, and often accompanied the Turkish king on his hunting expeditions.
One day, the pair spotted two hawks flying overhead, squabbling over a piece of meat. The king handed Zhang two arrows and asked him to take down the intimidating raptors, one after the other. Zhang carefully strung his bow, aimed closely at his first target, and let go. But much to even his surprise, he struck both birds in one stroke, accomplishing his task with only half the effort.
Now that’s what we call efficiency!

Dublin Iced Coffee
A delicious mix of caffeine, dessert, and danger

INGREDIENTS
2 oz. strong cold-brew coffee
2 oz. stout (such as AleSmith Speedway or Guinness)
1½ oz. Irish whiskey
¾ oz. simple syrup
1/2 ounce heavy cream
Freshly grated cinnamon stick (for serving)

Mix coffee, stout, whiskey, and simple syrup in a highball glass. Add ice to fill. Gently pour in cream so it gradually sinks into coffee; sprinkle with cinnamon.

Street Vendors, Vietnam

You can't miss the huge number of street food vendors on the streets of Ho Chi Minh City (Saigon), selling a variety of local Vietnamese favourites, like:

* Gỏi Cuốn (Fresh Spring Rolls)
* Bánh Xèo (Savoury Pancakes)
* Phở (Pho Soup Noodles)
* Bánh mì (Baguette sandwich)

You'll find a Vietnamese page on my site, full of recipes. Link below.

There is an unofficial 3 tier system to the street vendors in Saigon:

Top tier: vendors with a storefront, which they either own or pay rent on. Quite often, these are tiny little coffeeshop style establishments, with the vendors also living within the space.

2nd tier: vendors who tend to operate at the same spot day in day out. Their equipment consists of some sort of a mini catering trailer or box that is attached to a vehicle. Some even leave their trailers on the spot, all locked up of course, for the night.

3rd tier: these guys are extremely mobile and move from day to day; their method of transportation varies from a motorbike/scooter to a bicycle to their own two feet. The lady in the image has all she needs attached to her bike. Others pack a table, some chairs, cutlery, crockery and their food onto a single bike before going off and settling on a spot for the day.

Then you have travelling hawkers called gánh hàng rong in Vietnamese. They carry a long bamboo pole on the shoulder with a basket or pot on either end, selling a variety of foodstuff. It could be a full meal in the form of rice or noodles with vegetable and meat dishes or fresh fruit and vegetables or even dried foodstuff. What Is Lycopene ?

This incredible little molecule was first isolated in 1910, and the full molecule structure was discovered in 1931.

First of all, lycopene is a phytonutrient.
Put simply, phytonutrients are antioxidants found in plant life.

These nutrients are not originally created by the human body, but rather produced by plants as a defence against environmental damage, such as pests, toxins and UV damage.

Instead of allowing free radicals to run free within the plant, it creates various types of phytonutrients to protect itself.

Just like plants, we’re subjected to a lot of dangerous environmental chemicals and other things, like prolonged sun exposure, that can cause free radicals to damage cells throughout our entire bodies as well.

That’s why it’s so important to “eat the rainbow.”

Ostara Spell The Spring Equinox, called Ostara by many, is a day of perfect balance between night and day, darkness and light, slumber and awakening.

Many craft traditions, covens, and solitaries have devised their own rituals for awakening Mother Earth at this time.

Many of these can be traced back to England.
One common practice is to walk through a natural area, tap the earth three times with a staff or wand, and make a joyful noise to welcome the Goddess's return.

This ritual is performed three times in keeping with the sacred number of many of the Pagan sects from western European countries.

Now is not only a good time to awaken Mother Earth, but also to awaken ourselves.

We should ask: Are we only going through the motions now ?
Or are we reawakening our spiritual selves, and seeing anew all the magical possibilities of spring ?
To awaken your own body, mind, and soul to spring's rebirth, give back to Mother Earth some of the things we've taken from her.

Plant a tree, herb garden, or flowers.

Feed her animals and birds.

Beetroot & Fresh Horseradish Remoulade

Ingredients:
4 medium size beetroot
150ml oil
1 tsp red wine vinegar
2 tblsp grated fresh horseradish

Method:
Roast beetroot whole in baking tray covered in foil in hot oven [200 C] until soft.
Allow to cool slightly, then remove peel & grate coarsely.
Peel and grate Fresh Horseradish ( worse than tear gas ;)
Add grated beetroot & mix thoroughly. Serve

Chinese 101 - 龍(lóng) Dragon

Did you know dragons in Chinese culture are distinctly different from their flying, fire-breathing Western counterparts?

They have the eyes of a rabbit, the antlers of a deer, mouth of a bull, head of a camel, belly of a clam, palms of a tiger, claws of an eagle, scales of a fish, and the body of a snake—can you imagine?

Original bronze inscriptions of the character 龍 were of its left side alone, which clearly showed the dragon's body and horns. Later the right side of the character was added: the upper right portion symbolized the dragon's sharp claws, while the lower right portion symbolized its fins and tail.

Chinese dragons can be further divided into good or evil ones. Good dragons possess extraordinary powers and enjoy helping those who are kind and devout, such as the White Dragon King's daughter in this year's Shen Yun performance. Evil dragons abuse their powers and terrorize the populace, such as the red dragon in last year's dance, Ne Zha and the Dragon (Ne Zha Stirs The Sea).

It’s a fun way of cooking with a 6,000-year-old tradition.
There are two types of wood-fired ovens: "black ovens" and "white ovens".

Black ovens are heated by burning wood in a chamber. Food is cooked in that same chamber while the fire is still going, or in the heated chamber after the fire and coals have been swept out.

White ovens are heated by heat transfer from a separate combustion chamber and flue-gas path. Thus, the oven remains "white", or clean from ash.

While the traditional wood-fired oven is a masonry oven, such ovens can also be built out of adobe, cob or cast iron.

Wood-fired ovens are distinct from wood-fired stoves that have a hot cooking surface for pots and pans, like on a gas or electric stove.
A wood stove may also have an oven separate from the fire chamber.

Regardless of material they all have an oven chamber consisting of a floor (or hearth), a dome and an entry (oven opening).

Unlike modern household gas or electric ovens that provide a nearly constant cooking temperature, a black oven is typically heated only once during the firing stage (the combustion of wood inside the chamber).
After the coals are raked out, the oven gradually cools over a period of hours or even days (in the case of a well-insulated oven).

Oven temperatures may exceed 1000 degrees Fahrenheit (538 degrees Celsius).

The mass of the oven acts as a 'thermal battery', which slowly releases heat over time.
The retained heat in the oven may be used to bake multiple batches. Alternatively, foods requiring different temperatures can be cooked in succession as the temperature of the oven drops.

سمنو – Samanu: A sweet pudding made from germinated wheat
سنجد – Senjed: The dried fruit of the oleaster tree
سیر – Sir: Garlic
سیب – Sib: Apples
سماق – Somāq: Sumac
سرکه – Serke: Vinegar

These items are also known to have astrological correlations to planets Mercury, Venus, Mars, Jupiter, Saturn, Sun and Moon.

Nowruz, the Persian New Year
On the first Day of Spring

Nowruz or Norooz, pronounced no-rooz, is the festival that heralds the spiritual new year for Persian and some Central Asian communities, celebrating the start of spring and all that it entails: renewal, rebirth and new beginnings.

Nowruz, which falls on the first day of spring (vernal equinox), is a secular holiday, observed across the faiths and goes back some three thousand years, with practices that are partly rooted in the rituals and traditions of Zoroastrianism, the religion of ancient Persia, before the advent of Islam in 7th century A.D.

Nowruz is celebrated not just in Iran but also in other countries in Central Asia, like Iraq, Afghanistan, Azerbaijan and Turkey. The Indian Parsis also observe this holiday.
