D.O.M Bénédictine Is a herbal liqueur beverage developed by Alexandre Le Grand in the 19th century and produced in France.
D.O.M.This abbreviation is commonly used at the beginning of documents of the Benedictine Order as a short dedication of the work.
Burnley Miners' Club in Lancashire, United Kingdom is the world's biggest single consumer of Bénédictine liqueur, after Lancashire regiments acquired a taste for it during the First World War.
Burnley Football Club also sells Bénédictine on match days, making them the only English club to do this.
Cocktails using Bénédictine include the Frisco,

Singapore Sling,
Vieux Carré,
Cornell Special,and Monte Carlo.

Singapore Sling Shots
I have no idea which Collection to put this in! Since it's made using Singapore Sling, I've gone for the South East Asian Collection. Is it a dessert? Or is it an amuse-bouche?
Technically, these guys should be called Singapore Sling Jelly or Jell-O Shots but I think Singapore Sling Shots has a better ring to it, don’t you?
Just like regular jelly shots, alcoholic ones are fairly easy to master, a case of making up your desired cocktail, mixing it with some gelatine, vegetarian alternative or some warmed up ready made jelly.
There is no end to what you can create; all you need to figure out is the gelatine to liquid ratio (always given at the back of the packet) and make up your cocktail accordingly. And dissolving the gelatine is so easily done in the microwave, simplifying the whole process.

Technology propels our world, it has provided the ability to source information where once it would have taken weeks, and many trips to a variety of libraries. It has provided a means for information to be spread to all corners of the globe, instantly. Despite all the undeniable benefits it has also disconnected us. Not just from each other but also from our environment.
The ability to form connections with people through only a screen, a tribe or community could be seen as a positive. Scott Caplan Ph.D. in his 2003 thesis said that people develop a predisposition to forming relationships online and further creates a social anxiety, in the real world.
Individuals who suffer from psychosocial distress, such as loneliness and depression, hold negative perceptions of their own social competence.
Existing research on psychosocial health and interpersonal communication competence offers robust support for his claim. First, with regard to loneliness, considerable empirical evidence indicates a significant negative relationship between loneliness and both self- and observer ratings of one’s social skill
(Jones, 1982; Jones, Hobbs, & Hockenbury, 1982; Prisbell, 1988; Riggio, Throckmorton, & DePaola, 1990; Segrin, 1993, 1996, 2000; Segrin & Flora, 2000; Spitzberg & Canary, 1985; Spitzberg & Hurt, 1987).
In short, people who prefer to connect online over time experience increased loneliness, a greater feeling of isolation forms and socialisation skills in the real world, further erode.

For all technology has brought us one could also say it is having severe impacts on the wellbeing of adults and children alike.
Disconnection from people and environment creates a myriad of physical and mental health issues. Sedentary behaviour impacts the cardiovascular system, impeding the vascular endothelial growth factor, and Type 2 diabetes and obesity are heightened. Prolonged exposure to screens can cause myopia, a condition affecting long and medium vision.
For adults, an awareness can be all that is needed to adjust lifestyle habits. Although to coin a common sarcastic phrase, 'won't somebody think of the children'.
Now we have a new technology emerging, in a time when children need more 'reality, we are seeing the emergence of virtual reality. If screen time is bad for kids, just imagine the impact this new technology could have. Exacerbating already poor socialisation skills; while having even more impact on eyesight development.
I want to reiterate, I am in no way anti-technology, in this new series and soon to be published articles it is about awareness and positive reinforcement. In adults and children, we are seeing an increase in physical and psychological disorders. The more we are aware of the downside, the more we are educated, the easier it is to create change.

FLOATING ISLAND DESSERT
YOU'LL NEED...
Meringue
2 egg whites
pinch of salt
2 1/2 tbsp sugar
4 tbsp sugar
1 tbsp + 1 tbsp water
2 egg yolks
3 tbsp sugar
3/4 cup milk
2-3 drops vanilla oil
2/3 oz. sliced almonds
blueberries
cranberries
LET'S GET COOKING...
To make the caramel sauce, combine the sugar and 1 tbsp water in a saucepan. Heat over medium heat until golden in color. Add in another 1 tbsp water and stir to combine. Pour caramel into an oven-safe bowl. Sprinkle with almond slices and set aside.
Next step is to make the meringue. In a bowl, combine the egg whites and salt and beat for 1 minute. Add in the sugar and continue beating until stiff peaks.
Pour the meringue on top of the caramel sauce and smooth out the surface with a spatula. Prepare water bath for the oven. Bake for 25 minutes at 320 degrees F.
To make the custard sauce, heat the milk in a saucepan over low heat until just before boiling. Combine egg yolks and sugar in a bowl and beat until it's white in color. Add in the warmed milk and vanilla oil and mix quickly. Put mixture back into the saucepan and cook over low heat until thickened.
Pour the custard sauce onto a serving plate. Scoop the meringue on top of the sauce and garnish with blueberries, cranberries or your favorite fruits. Drizzle with caramel sauce and serve.
